Olive Caper Halibut

Chef Keith Snow of Harvest Eating.com prepares a delicious halibut with olives and capers.

Ingredients:

Halibut Filet
1/4 cup Green Olives
1/4 cup Capers
1 tbsp Orange Juice
1 tsp Fresh Ginger, minced
1/2 tbsp Olive Oil

Directions:

1. Combine olives, capers, ginger, and orange juice in a food processor and chop into a chunky paste.
2. Add some olive oil to an oven-safe pan or casserole dish. Place the halibut fillet in the pan, presentation side up. Pack the olive caper sauce on the top of the fillet evenly, about 1/4 inch thick.
3. Cook the fish in a 375 degree oven 8-10 minutes, until cooked through. Serve with a drizzle of extra virgin olive oil.
