Natural bacon with it's crispy and smoky undertones is magic in the mouth. Most bacon comes from factory farmed pork which is sad, but it's he way our food system currently works. There are alternatives which I discuss in today's Harvest Eating podcast episode. I believe we all can find naturally produced artisan bacon in about every state here in the USA. It takes a bit of effort...but a quick Google search can yield plenty of options for great bacon that is a true alternative to supermarket bacon. If supermarket bacon is the only option don't fret....there are some good choices but be sure NOT to rely on marketing messages, logo, brand names etc. Buy bacon for it's actually quality, taste and flavor and don't pay attention to the label. Use the cooking suggestion I give in this episode and enjoy the wonderful thing we call bacon.
