Sesame Kale
Chef Keith Snow.
Name: Sesame Kale
Description: Easy to make one-pot dish of southern greens with an Asian twist. Absolutely delicious, kids love greens made this way.
Ingredients: 1 lb kale, collards, or mustard greens, thoroughly washed in cold water
1 shallot, sliced
1 tbs dark toasted sesame oil
2 tbs toasted white sesame seeds
1 tbs red wine vinegar (cider, rice wine, or white vinegar work well too)
kosher salt & black pepper to taste
1 cup cold water or chicken stock
Directions: 1. In a heavy pot with tight fitting lid over medium heat, add some oil, bacon fat or salt pork, then add shallot and stir for 1 minute, add greens, vinegar and water or stock.
2. Toss with salt & pepper and lower heat to low and simmer slowly for 25-40 minutes with lid on.
3. When done toss in sesame seeds and sesame oil, mix well serve.

Chef's Note: Make sure the pot does not go dry, if your lid is not very tight, you may have to add some water during cooking. Make sure it's over very low heat, or you will burn it!
