2 ears corn on the cob...use sweet corn such as red corn-remove kernels 1 sliced shallot 2 tbs diced tomato 2 tsp pure olive oil 1 tsp bacon fat (optional) kosher salt to taste fresh cracked black pepper to taste 1 tbs chopped fresh thyme 2 tbs heavy cream | | Directions: |
1.-In a heavy skillet add oil and bacon fat...saute shallots for 30 seconds then add corn. 2.-Add tomato, cream salt and pepper, let cook for a few minutes to reduce cream. 3.-Add thyme and serve. |
