How To Make Pan Roasted Salmon

Pan Roasted Salmon

Name: Pan Roasted Salmon
Description: Pan roasted salmon fillet with a coriander crust and a quick orange butter pan sauce. Very tasty, very healthy and quite easy and quick to prepare.
Ingredients: 3-4 oz pacific salmon fillet, line caught if possible
2 tbs ground coriander seeds
2 tbs extra virgin olive oil
kosher salt/pepper to taste
1/4 cup dry white wine to deglaze
juice of 1/2 navel orange
2 tbs cultured butter (organic valley brand)
zest of one orange
Directions: 1-Season fillet with salt/pepper then rub in ground coriander powder to form crust.

2- Add olive oil to heat it up.

3-In a heavy bottomed skillet of medium heat lay the fish flesh side down in the hot olive oil.

4-Cook slowly without moving the fillet for 4-5 minutes before flipping gently as not to break the fillet.

5-Once cooked to a medium (or more if you prefer) remove fish and deglaze pan with wine....be sure to remove the pan fro many live flame.

6-Once wine is reduced by half..pan will be almost dry, add zest and juice of orange. Swirl around to break up any brown bits on the pan..FLAVOR!!!

7-Turn off heat and swirl in butter, taste for seasoning..maybe more salt or pepper????

8-Add sauce to fish, enjoy.

Chefs Note: Coriander powder can be bought in bulk in stores like Whole Foods/ Wild Oats..or buy the seeds and grind yourself in a mortar with pestle or clean coffee grinder. Will stay fresh ground for 2-3 months.
