Perfect for summer, this dish takes under 30 minutes to make and needs just a few ingredients. Of course, in my opinion, the special touch is my Harvest Eating Northern Italian Seasoning; a blend of basil, rosemary, oregano, marjoram, garlic, and porcini mushroom.

This dish takes under 30 minutes to make and needs just a few ingredients. Of course, in my opinion, the special touch is my Harvest Eating Northern Italian Seasoning; a blend of basil, rosemary, oregano, marjoram, garlic, and porcini mushroom.

Ingredients

  • 3 tbs extra virgin olive oil 
  • 1 tbs butter
  • 2 lbs freshly picked green beans
  • 1 shallot, minced
  • 5 cloves garlic, minced
  • 1 cup your favorite stock: chicken or vegetable
  • 1 cup diced tomato (canned petite diced work great here if you don't have fresh)
  • 1 tsp Italian Seasoning
  • salt & pepper to taste

Instructions

  1. In a large skillet over medium-high heat add oil and butter
  2. Toss in shallot and garlic, cook 1 minute stirring constantly
  3. Add green beans and stock, lower heat to medium, and cook tossing often 10-12 minutes or until beans are tender
  4. Add tomatoes, cook just until they are hot
  5. Add salt, pepper, and Italian seasoning, stir well and serve in a large bowl
  6. Serve in a large bowl, garnish with grated cheese
