Making Mayonnaise-It's simple!

I get a lot of inquiries regarding making mayo or Aoli as it’s also referred to. This is so simple and makes a better product than just about all store-bought mayonnaise. While this is basic, the exact same method can be altered by using flavorings such as garlic, lemon zest, fragrant herbs like dill, tarragon, basil, thyme, etc.

The other point which is important to mention is that just about all commercial mayonnaise is made using GMO mono-crop seed oils which IMO are not the most healthy to eat. There is avocado oil mayo in the market but some (like my family) find it to be off-tasting and not as good as say…Dukes!

This simple mayo is made with healthy oil rather than GMO mono-crop seed oils and it tastes fabulous.

Ingredients

  • 1 farm-fresh egg
  • 1/2 tbs fresh lemon juice
  • 1 tsp white vinegar
  • 1/4 tsp Dijon mustard
  • 1/2 tsp kosher salt
  • 1 cup neutral oil such as light olive, sunflower, grapeseed, or avocado

Instructions

  1. Add all ingredients to a small glass container that your immersion blender can fit into.
  2. With the head of the immersion blender on the very bottom blitz for 30 seconds before slowly moving up the jar to make sure all the oil is immusified.
  3. Alternatively, you can do this in a bowl with a whisk if you add all ingredients EXCEPT oil, whisk for a few seconds then slowly add oil in small stream while whisking to incorporate oil

Notes

This can be flavored with Tarragon, fresh basil, parsley, or even dill. Alternatively, you can make this a lemon garlic mayo too...use for chicken sandwiches, lobster rolls, or any dish that needs a brighter flavor such as tuna salad.
